I have definitely seen ore regenerate, I'm not sure exactly how it works. I'm pretty sure the ore has to be completely mined, but I've had iron come back when other ore I couldn't mine yet was still in the cave. It was not regenerating fast enough to find a common theme. I've also had it where nothing seemed to be regenerating in a cave.
